Asked by Emilymm. Answered on 7th December 2024

Full question

This is a question about the Rosemary Remembrance Cake. The recipe says 1 eating apple then shows the weight 180g/6oz. The apples I have are cox and weigh under an ounce. Should I be going by no of apples or weight of apples? Thanks!

Our answer

Nigella's Rosemarty Remembrance Cake (from FEAST) is a Madeira-style loaf cake that has the addition of a rosemary-perfumed apple purée. The peeled and cored apple is cooked with some sugar, butter, lemon juice and a sprig of fresh rosemary.

The ingredients list mentions one apple and the reason that the weight is also given is that apples do vary a lot in size. Whilst the weight is approximate, it does sound as if your apples are very small. So we would recommend using the weight of apples instead, as close as possible to 180g/6oz.
