Just wondering if it would work cutting the Rococoa Cake into 3 layers horizontally, rather than sliced like a loaf? Or is there an obvious reason for doing it this way?

Nigella's Rococoa Cake (from FEAST) is a cake that is layered with a tiramisu-type filling and iced with a chocolate glaze. The baked sponge is sliced vertically into thin slices and then the slices are layered into a cake tin and brushed with an espresso syrup.
The sponge itself is made with flour, cornflour and cocoa powder. This combination is quite low in gluten and gives a very tender, crumbly cake, meaning that it is much easier to cut vertically into slices rather than horizontally into three. You could certainly try cutting the cake horizontally, but in our experience the cake tends to break up as it is cut and lifted and needs to be patched back together anyway. Soaking the slices with espresso syrup helps them to stick together in the tin, so you should get fairly solid layers when the finished cake is cut into slices.
