Small Portions Of Korean Beef And Rice Pot

Asked by Martinealarge. Answered on 11th July 2016

Full question

Hi, Is it possible to half the quantities for the slow-cooker Korean Beef And Rice Pot? Alternatively, could it be frozen without the bean sprouts stirred through? I'm keen to make it, but there are only 2 of us, and even though we're quite greedy, 6 portions is too much.

Our answer

Nigella's Korean Beef And Rice Pot (from SIMPLY NIGELLA) is an easy and satisfying one-pot dish made in a slow cooker. Nigella's recipe is for 6 portions and is cooked in a family size slow cooker.

It is possible to halve the quantities, especially if you have a smaller size slow cooker. If you are using a regular size slow cooker you may find that the pot cooks a little more quickly, though slow cookers are very helpful in that the food can stay warm in the pot for some time, or you may need a splash of extra water. It depends on the capacity of the pot and how tightly the lid fits. Leftovers could be frozen for up to 3 months but make sure that the leftovers are cooled and chilled as quickly as possible and then defrosted overnight in the fridge and reheated until piping hot the whole way through.
