With the Nigella bundt cake recipes can you use a 6-cup bundt tin and use the rest of the recipe for cupcakes? I have a smaller bundt tin and wondered if the rest could be made into cupcakes so that I don’t need to purchase another one. Thank you.
Our answer
Nigella's Cider And 5-Spice Bundt Cake and Thyme And Lemon Bundt Cake (both from SIMPLY NIGELLA) are made in 2.5 litre/10-cup capacity bundt tins. A 1.4 litre/6-cup bundt tin is smaller and you could use this tin with 2/3 of the cake batter and bake the extra as cupcakes. The cakes can also be baked in a 20cm/8-inch square cake tin.
The smaller bundt tin is likely to take 35-40 minutes to bake but start checking at 30 minutes. Our guess is that the excess will make around 12 cupcakes (filling each cupcake paper liner half full) and the cupcakes are likely to take 20-25 minutes to bake. However they could take a little longer as the oven temperature is slightly lower than the usual setting for cupcakes. Please bear in mind that the batter for the cakes needs to be baked as quickly as possible as if it is left to stand then the cakes may not rise as well. So make sure that you have the oven capacity to bake both bundt cake and cupcakes at the same time. Please note also that we have not tried the cakes in either of these smaller sizes so can't guarantee the results.
