Smaller Sized Gratin

Asked by soupersuzy. Answered on 1st November 2019

Full question

The Creamy Potato Gratin sounds delicious and I'd like to try it. Would it work if I cut the ingredients in half? Also should a gratin have cheese in it?

Our answer

Nigella's Creamy Potato Gratin (from NIGELLA BITES) is a dish of sliced potatoes, milk and cream. This version simmers the potatoes on the stove top before finishing the dish in the oven, which makes this a slightly speedier dish than Pommes Dauphinoise. The method means that it easy to reduce the quantities of the gratin, as you don't need to adjust the cooking time significantly. If you use a half quantity of the ingredients then use a smaller dish (something like a 23cm/9-inch square or approximately 22x30cm/9x13 inch rectangular dish). The time taken to cook the potatoes on the hob (using a medium to large saucepan) should be the same and the short 15 minute blast in a hot oven should not change either.

A gratin is a dish baked in the oven until a crust forms on top. It often has a topping made from cheese or breadcrumbs, but does not necessarily have to include these ingredients.
