Could I purée the Happiness Soup, or would it be too watery?
Our answer
Nigella's Happiness Soup (from NIGELLA SUMMER) is a summery soup made with yellow courgettes (yellow squash) and rice. The rice adds some substance to the soup as well as acting as a thickener. If you are happy with the consistency of the soup then it should not become that much thinner when it is blended.
If you would prefer a thicker soup then we suggest using only 900ml/ 3¾ cups of stock (broth) when cooking the soup. Let the soup cool a little then blend the soup and add the remaining stock a little at a time until you get the consistency that you like. The soup will also thicken a little more if it is refrigerated, so add a little extra liquid when reheating and always reheat the soup until it is piping hot.
