I cant wait to try the Chocolate Peanut Butter Cheesecake! How long in advance can it be made and can it be frozen?
Our answer
Nigella's Chocolate Peanut Butter Cheesecake (from KITCHEN is a baked cheesecake that is flavoured with peanut butter and has a chocolate and sour cream topping. The cheesecake will keep in the fridge for up to 4 days, so we would suggest making it no more than 2 days in advance to allow time to eat leftovers. Make sure the cheesecake is completely cold (you may want to refrigerate it for a few hours first) then cover the cheesecake, still in its pan, with a plate or a piece of foil or clingfilm (plastic wrap), making sure that any covering does not touch the surface of the cheesecake.
The cheesecake can be frozen for up to 1 month, providing that it is made with full fat cream cheese. However when the cheesecake thaws you sometimes get beads of condensation on the surface which can spoil the appearance slightly, though the cheesecake is fine to eat. To freeze the cheesecake, wait until it is completely cold then wrap it tightly, still in its pan, with a double layer of clingfilm and a layer of foil. Thaw the cheesecake overnight in the fridge and eat within 2 days.
