I wanted to know please how long I can keep the Broccoli And Stilton Soup in the fridge? There are tips on freezing but I couldn't find anything on keeping in the fridge. Many thanks.

Nigella's Broccoli And Stilton Soup (from NIGELLA EXPRESS) is a quick to make soup that uses frozen broccoli florets. As the soup contains Stilton cheese we suggest that you cool and refrigerate the soup and quickly as possible and it can be kept in the fridge for up to 3 days. The soup should be reheated gently in a saucepan until it is piping hot but not actually boiling, as the cheese can burn on the bottom of the pan if the soup boils.

The soup can become a little grainy when it is frozen and defrosted, though it doesn't affect the flavour of the soup. The soup may also look a little separated and watery at first, but it usually amalgamates again once it is heated. If you do freeze the soup then defrost it in the fridge overnight and use within 24 hours, heating it until it is piping hot.
