Storing Brownies

Full question

How long will Brownies made from the recipe in Domestic Goddess keep and how should I store them? I'm making them for a school fair and don't really have the freezer space to freeze ahead.

Our answer

Nigella's classic Brownies (from HOW TO BE A DOMESTIC GODDESS) are moist and squidgy and should keep well in an airtight container for up to 5 days. However, if you are making them for a special event, such as a bake sale, then you may prefer to make them 1-2 days ahead to be sure that they are at their very best. In very hot weather it is a good idea to keep the brownies in the fridge and remove them about an hour before you want to eat them.

It is possible to freeze the brownies, if you have space in the freezer. Let the slab of brownies become completely cold, then wrap it, still in the tin, in a double layer of clingfilm (plastic wrap) and a layer of foil and freeze for up to 3 months. To defrost, remove the tin from the freezer, unwrap it and leave at room temperature for 2-3 hours. You may find it easier to cut the brownies and remove them from the tin when they have softened slightly but are still partially frozen. If you wish to freeze the brownies individually then wrap each one in clingflim and freeze in airtight containers for up to 1 month. The smaller size makes the individual brownies more vulnerable to freezer burn. Individual brownies should thaw in about an hour.
