Storing Pink Pickled Onions

NIgella mentions Pink Pickled Onions in Cook, Eat, Repeat but I can’t find any instructions about how long you can keep the pickled onions in the fridge. I’d like to make these but won’t be able to eat them all at once!

Nigella has used pink pickled onions as an accompaniment for many dishes in COOK, EAT, REPEAT) and also in AT MY TABLE) and SIMPLY NIGELLA and mentions that she often has a stash of them in her fridge. They are easy to make as thinly sliced red onions are covered with lime juice or vinegar, with a little salt. As the onions stand they turn from red to puce pink.

The onions can be ready to eat within an hour or so, but if possible we would prefer to pickle the onions a day ahead and leave them in the fridge until needed. As it is a quick pickle with cold liquid, the onions do not keep for a very long time but leftovers should keep in the fridge for up to one week from the day of making.
