Stuffing For Roast Goose

Full question

Can I use dried cranberries and soak them with the dried pears for the roast goose stuffing? I can’t get fresh or frozen cranberries where I live.

Our answer

Nigella's Roast Goose With Pear And Cranberry Stuffing has a sharp-sweet stuffing made from dried pears and fresh (or frozen and thawed) cranberries. Unfortunately we don't think that using dried then soaked cranberries will work as they will not release the same amount of moisture that you would get from whole cranberries. Also they are rather sweet, which would make the stuffing slightly cloying.

You could try substituting peeled, cored and grated apple instead of the cranberries. Use a sharp apple such as a Granny Smith and we suggest using the same weight of grated apple as cranberries (175g/approximately 1¾ cups grated apple, loosely packed). However we would mention that as we have not tried the recipe with this substitution, we are unable to guarantee the results.
