Sugar For Chocolate Fudge Cake

Hi, can I use dark muscovado sugar instead of light muscovado in the Chocolate Fudge Cake? I can’t seem to find the light sugar anywhere.

Our answer

Nigella's Chocolate Fudge Cake (from NIGELLA BITES) has moist chocolate sponge layers made with a combination of golden caster sugar and light muscovado sugar. The muscovado sugar helps to add a slight caramel flavour and also helps to keep the sponge moist.

If you can't find light muscovado sugar then you could use dark muscovado instead. The difference between the two is that the dark version is less refined than the light version, so has a slightly higher molasses content. This gives a more treacly flavour, but we do not think that this will adversely affect the flavour or texture of the cake. You could also use white caster sugar rather than golden caster sugar in the cake, to help to slightly offset the dark muscovado.
