Is it possible to reduce the sugar in the Clementine Cake?

Our answer

Nigella's Clementine Cake (from HOW TO EAT) is a gluten-free cake that is made with whole cooked clementines. The cake also contains eggs, sugar and ground almonds (almond meal). Unfortunately we would not recommend reducing the amount of sugar in the cake in any material way as in this particular cake the sugar provides some of the structure of the cake, as there is no flour. Also the cake contains whole clementines and is not overly sweet, so reducing the sugar could change the flavour of the cake. Unfortunately we have not tested the cake with any sugar alternatives so we regret that we are unable to advise on substitutes.

However, the cake does freeze well and if you wanted to freeze individual portions to eat separately then you could wrap each slice tightly in clingfilm and lay the slices on a baking sheet. Freeze until solid then transfer the slices to a resealable container and freeze for up to one month. The individual slices should thaw in about an hour if put in a single layer on a plate at warm room temperature.
