Sunflower Oil For Dark And Sumptuous Chocolate Cake

Asked by melk. Answered on 14th April 2020

Full question

As I'm trying not to go out and not having coconut oil (or eggs which is why I turned to this recipe!) please can you tell me if sunflower oil would be a good alternative in the Dark And Sumptuous Chocolate Cake? Or olive oil? Or, as a non-vegan, would melted butter work? I've made this cake before as per the recipe and know that it's great! Thanks so much.

Our answer

Nigella's Dark And Sumptuous Chocolate Cake (from SIMPLY NIGELLA) is a vegan chocolate cake that can be enjoyed by everyone. It uses melted coconut oil in the cake batter but this can be replaced with sunflower oil or another flavourless vegetable oil, if necessary. Use 90ml/⅓ cup plus 2 teaspoons of flavourless vegetable oil instead of the coconut oil. Olive oil has a stronger flavour so we would avoid using this, if possible.

For the frosting you can use a vegan margarine as an alternative to the coconut butter. If you are not vegan then regular unsalted butter can also be used as an alternative. Avoid using any oils for the icing as the icing will be a little greasy and won't set properly if oil is used.
