Some of Nigella's recipes call for "sweet white miso". I have not been able, as yet, to find anything labelled as such, only regular white miso. Am I correct in assuming these are different? Is there a particular manufacturer that I should look out for? Thank you.

White miso is made from fermented soybeans. The beans are usually fermented with rice for only a short period of time, which means that the miso has a fairly mild taste and colour in comparison with other miso pastes, such as yellow or red. The taste is also usually slightly sweet and hence it is known as "sweet white miso". However it can also be labelled as just "white miso" or "shiro miso".
White miso can vary in colour from almost white to a beige colour and we would try to find one that is quite light in colour and made with just rice, soybeans and water and possibly a little salt.
