My wife does not like eating fish but loves calamari. Could I add some calamari rings to the Thai Yellow Pumpkin And Seafood Curry, as well as the fish and prawns?

Our answer

Nigella's Thai Yellow Pumpkin And Seafood Curry (from Nigella Bites and on the Nigella website) is made with a combination of salmon and prawns (shrimp) but it is a very flexible recipe and substitutions for the seafood or fish to suit your own tastes are absolutely fine.

If using alternative seafood then you just need to consider how long the ingredient takes to cook. Calamari (squid) can be unpleasantly rubbery if it is cooked incorrectly, so you may need to cook it only for a brief period time depending on the size of the calamari pieces/rings and whether they are fresh or frozen. Bear in mind also that the green vegetables need 1-2 minutes to wilt down so you need to allow for that too when considering the calamari cooking time.
