Full question
What size is the tin in Nigella's Vanilla Shortbread recipe?
Our answer
Nigella's Vanilla Shortbread (from NIGELLA SUMMER) has a buttery dough that is pressed into a swiss roll tin. In the UK these tins are rectangular with dimensions of approximately 23 x 33cm (9 x 13 inches) and have very shallow sides of around 2cm (3/4 inch). The tin can usually be found in bakeware stores and as it has shallow sides it can be used as a baking sheet for other recipes.
In the US jelly roll pans can be larger (about 10 x 15 inches) so we would suggest using a quarter sheet pan instead, as these are closer to the UK swiss roll pan size and also have low sides. Please also note that using a pan with sides that are higher than around 2.5cm (1 inch) could affect the baking time of the shortbread.
