I have diabetes so I avoid sugar. I can substitute sucralose for the sugar and I would normally use low calorie tonic. Why isn't low calorie tonic recommended for the Gin And Tonic Jelly?

Nigella's Gin And Tonic Jelly (from HOW TO BE A DOMESTIC GODDESS) is a grown-up dessert that is a drink in jelly form. The recipe uses regular tonic water and not low calorie/diet/slimline tonic water.
When using gelatine there are several factors that can affect the set, these include alcohol, acid and sugar. Sugar, when dissolved in water, affects the density of the liquid and the density will affect how much gelatin is needed to set the liquid. Sugar also acts on protein chains and so will also affect the way gelatine works when setting. So switching sugar for artificial sweeteners can affect the final set of the jelly and may require an adjustment in the amount of gelatine used. Hence we don't recommend using low calorie tonic or artificial sweeteners for this recipe.
