Too Sticky Marshmallow Crispy Squares

Full question

The Marshmallow Crispy Squares recipe was an absolute nightmare. This horrendous superglue absorbed more utensils than I'd like to admit, before I ended up throwing the growing mass into the bin. How can I control the unrelenting mixture?

Our answer

Nigella's Marshmallow Crispy Squares (from NIGELLA EXPRESS) is made with a mixture of melted mini marshmallows and puffed rice cereal. The marshmallow mixture is quite sticky and Nigella notes in the recipe that you may want to use disposable vinyl CSI-style gloves to help to spread the mixture out in the greased tin.

The mixture will become more sticky as it starts to cool so try to work quickly, add the puffed rice cereal as soon as the marshmallows have fully melted and try to put the mixture into the tin as quickly as possible. It can also help to lightly grease the utensils with some flavourless vegetable oil, as this will reduce the likelihood of the mixture sticking to the utensils. To clean up the saucepan and utensils afterwards, let them soak in hot water for 10-20 minutes before cleaning them with hot, soapy water. Soaking in hot water will help to dissolve the sugar in the marshmallows.
