Is it possible to make the Totally Chocolate Chocolate Chip Cookies gluten free? Whenever I make gluten free biscuits they never keep their shape and spread out. Is there a secret to make them ok?

NIgella's Totally Chocolate Chocolate Chip Cookies (from NIGELLA EXPRESS) are chocolate cookies studded with chocolate chips. We haven't tried the cookies with gluten-free flour but cookies made with gluten-free flour will tend to spread more than those made with wheat flour. Chilling the shaped cookies before baking them can help a little, but won't completely stop them from spreading. In addition, the cookies will tend to be fragile when warm and you may need to let them cool completely before you remove them from the baking sheet.
For a gluten-free chocolate cookie we would instead suggest trying Nigella's Triple Chocolate Buckwheat Cookies. These have all of the chocolate flavour of the Totally Chocolate Chocolate Chip Cookies but they are made with buckwheat flour, which is gluten free. The buckwheat flour also adds a smoky background note that enhances the chocolate flavour.
