How far in advance can the Turkish Delight Syllabub be made before serving?
Our answer
Nigella's Turkish Delight Syllabub (from NIGELLA BITES) is an airy dessert made with whipped cream, rosewater and Cointreau. Unfortunately whipped cream starts to lose its lightness if it is left to stand for too long so for the best possible texture we would suggest making the dessert no more than one hour in advance, if you are using double cream. Double cream has a high fat content (48%) and holds fairly well once whipped but If you are using a heavy or whipping cream with a lower fat content (usually around 35%) then the syllabub may start to separate slightly as it stands, so we would suggest making it no more than 30 minutes in advance.
Store the syllabub in the fridge until you are ready to serve. Leftovers can be stored for a day in the frdge, loosely covered. Remove from the fridge 30 minutes before serving so that the syllabub loses some of its chill and bear in mind that the texture will be firmer and more mousse-like and there may be a little thin liquid in the bottom of the glasses. We would also mention that unfortunately we are unable to recommend a non-alcoholic substitute for Cointreau.
