Twelve Red Velvet Cupcakes

Full question

I want to try and make Nigella's Red Velvet Cupcakes, but only want to make 12 and need to scale down the ingredients. I notice that the recipe for 24 uses 2 large eggs, do you suggest using one egg for 12 cupcakes?

Our answer

Nigella's Red Velvet Cupcakes (from KITCHEN) recipe is for a cupcake version of the classic cake, made with cocoa powder and red food colouring paste and topped with a buttery cream cheese frosting. The recipe makes 24 cupcakes or is enough for a two layer 25cm/10-inch cake.

If you want to make 12 cupcakes then fortunately for this recipe it very easy to halve the quantities of all of the ingredients as they are mostly even amounts. So you would only use 1 egg and for the buttermilk use 90ml, or a slightly generous 1/3 cup. Sometimes if you reduce a recipe quantity you need only half of an egg. If this is the case then we would suggest using just the egg yolk as it is easy to separate an egg, rather than using half of a beaten egg, and the white can be frozen for future use.
