Our answer

Nigella's Lamb With Rosemary And Port (from KITCHEN) are pan-fried lamb steaks that are finished with a simple pan sauce of butter, rosemary and ruby port. Port is a slightly sweet fortified wine that comes in two main styles. Ruby port is red in colour and has a flavour of berry fruits. Tawny port is darker in colour and more of a tawny brown shade (hence the name) and has a caramelly flavour. It often states the style of port on the bottle, but you should be able to tell which type you have from the colour of the port.

Ruby port works well with lamb as the fruity flavour complements the meat. However if you only have tawny port then this could be used in the sauce and you could also add a teaspoon or two of redcurrant jelly to the sauce to add some extra fruity flavour.
