Can I use lamb or beef ribs instead of pork for the Maple Chicken 'N' Ribs?
Our answer
Nigella's Maple Chicken 'N' Ribs marinates pork spare ribs and bone-in chicken thighs in a mixture of apple juice, maple syrup and soy sauce. The marinade helps to flavour and tenderise the meat and cooks to a glossy deep brown glaze.
We would not use beef short ribs for this recipe as beef ribs are better if slow cooked and the time in the oven isn't really long enough for this, plus beef ribs are much larger than pork ribs. It is probably possible to use lamb ribs as they are smaller and cook more quickly, though they contain more fat than pork ribs and are better if cooked on a rack set over a roasting pan so that they don't end up sitting in a pool of rendered fat.
