Our answer

The shortcakes in Strawberry Shortcakes (from HOW TO BE A DOMESTIC GODDESS) is a sweet scone that is then split and filled with whipped cream and fresh strawberries. Whilst it is difficult to replace the whipped cream, you can probably use vegan alternatives in the shortcakes themselves.

The butter can be replaced with a plant-based alternative but it needs to be firm and from a block, and not a soft spread. For the cream and eggs it is a bit more tricky but we would suggest using your favourite plant-based cream and increasing the amount to 170ml to allow for the liquid from the egg. You may also like to add 1 teaspoon of vanilla extract to add a little extra flavour. Also as plant-based creams can taste slightly sweeter than regular cream, you may want to reduce the sugar in the recipe by 1 tablespoon, but we suggest you taste the cream you are using before you decide. Finally, brush the tops of the shortcakes with a little extra plant-based cream instead of the egg white. However, as we have not tried the shortcakes with these ingredients, we are unable to guarantee the results.
