Is it possible to substitute soya beans with fava beans for the Curry In A Hurry? Or anything else? I can't find them in our shops.

Our answer

Nigella's Curry In A Hurry (from NIGELLA EXPRESS) is a Thai-style chicken and vegetable curry. It is made with chicken breast and frozen vegetables, so it is quick to prepare and cook. Nigella uses a mixture of frozen peas, green beans and soya beans (shelled edamame), all of which are available in major UK supermarkets.

Soya beans are also known as edamame, so you may find them under this name and the recipe uses shelled beans (not beans in the pod). If you can't find these then you could use frozen fava beans as an alternative or frozen broad beans, though we find fava beans slightly mealy and some people won't like the skin that is usually found on broad beans. Another alternative is to use frozen sweetcorn kernels. Otherwise you could just use extra frozen peas and green beans (100g/3/4 cup extra of each).
