Hello! I loved the look of the Beef and Aubergine Fatteh on Nigella's TV programme (the programme is superb). Would it be ok to make it with veggie mince instead? Thanks in advance.

Our answer

Nigella’s Beef And Aubergine Fatteh (from AT MY TABLE) lends itself very well to becoming a vegetarian dish. We would prefer to make it with a mixture of all vegetables and would suggest adding an extra 500g (1 1/4 pounds) of mixed diced vegetables of your choice. The vegetables need to be ones that cook fairly quickly and extra aubergines (eggplant), red (bell) peppers, mushrooms, and courgettes (zucchini) would all work quite well.

When cooking the vegetables keep an eye on the pan as you may need to add a splash of water or vegetable stock (broth) while they are cooking if the pan gets too dry, it will depend on the mixture of vegetables used.
