For the Pasta With Courgettes, what can we replace the vermouth with (non-alcoholic)?

Nigella's Pasta With Courgettes (from NIGELLISSIMA) is a summery pasta dish where the sauce is made from diced courgettes that are cooked until soft. The sauce can be made while the pasta cooks.
The courgettes need a little liquid to soften in and the recipe suggests dry white vermouth, though you could also use dry white wine. Both of these add flavour and a slight edge of acidity. Otherwise you could use either water or weak vegetable stock and a small squeeze of lemon juice as a non-alcoholic alternative. If you use stock then season the finished dish carefully as the stock will reduce down and be slightly saltier than either water or vermouth.
