What could I use instead of Tia Maria/liqueur for the chocolate fruit cake in Feast? Also how long will it keep for? Wrapped in foil or in an airtight container?

Nigella's Chocolate Fruit Cake (from FEAST) is a popular alternative to a traditional rich fruit cake and is often enjoyed by people who dislike fruit cake. The fruit for the cake is simmered with coffee-flavoured liqueur as coffee can help to enhance the flavour of chocolate.
If you need to avoid using alcohol then orange juice is a good alternative, though it can give the cake a slight "chocolate orange" flavour. Alternatively, you could try using freshly brewed coffee (regular strength and not espresso strength). The cake should keep for around 2 weeks in an airtight container. It does not need maturing in the same way as a regular fruit cake and can be eaten straight away. For longer storage we suggest freezing the cake. Wrap the cooled cake in a double layer of food wrap and a double layer of foil. Freeze for up to 3 months. To thaw the cake, unwrap it and leave it on a plate at cool room temperature overnight then store in an airtight container.
