I want to make the Rolled Stuffed Loin Of Pork with Rubied Gravy, but can't take alcohol. What can I substitute in the marinade, or can I omit this step? And what do you suggest as a non-alcoholic sub for the port in the gravy? Thank you.

Nigella's Rolled Stuffed Loin Of Pork With Rubied Gravy (from NIGELLA CHRISTMAS) opens out a loin of pork, and marinates the meat overnight before rolling it, and stuffing and wrapping the whole joint with bacon. The result is a roast that is moist, flavourful and easy to carve.
The marinade uses dry white vermouth and it helps to season and flavour the pork loin. There isn't really a good substitute for vermouth, though you could possibly use a not-too-sweet apple juice and just use 2-3 tablespoons. But it is probably easiest to just make the marinade omitting the vermouth. For the gravy you can replace the port with extra stock. Once you have made the gravy, taste it before serving as you may want to add a teaspoon or two of redcurrant jelly to make up for the sweetness of the port.
