For some reason my stomach reacts to aubergine, so I was wondering what would be the best substitute in the Beef And Aubergine Fatteh?

Nigella's Beef And Aubergine Fatteh (from AT MY TABLE) is a rich mixture of beef and vegetables sitting on top of crunchy toasted pitta and topped with a garlicky sauce.

It is possible to use other vegetables instead of aubergine (eggplant), as long as they be diced into a similar size and cooks fairly quickly to a soft texture. We would probably think first of a large courgette as one possibility or about 400g (14 ounces) of mushrooms, diced into small cubes would be another alternative. But if you have a favourite that can be diced and cooked quickly until soft then certainly use that as an alternative.
