For the Ginger Syllabub, what can I use instead of ginger wine? Can I make this beforehand? And for how long? Thanks for answering.
Our answer
NIgella's Ginger Wine Syllabub (from AT MY TABLE) is an airy confection of whipped cream, plus ginger in the form of juice squeezed from freshly grated ginger plus ginger wine. Ginger wine is a fortified wine made with root ginger and Stone's and Crabbie's are probably the best-known brands.
If you don't have ginger wine then you may be able to use a sweet white wine and slightly more ginger juice. But to our minds this isn't quite Ginger Wine Syllabub, as the ginger wine is so fundamental to the flavour, and you may prefer to see if you can make one of Nigella's other syllabub recipes instead, such as Calavados Syllabub or Turkish Delight Syllabub. Generally we prefer to serve syllabubs straight away and not make them in advance, as they lose some of their light and airy texture as they stand and syllabubs made with whipping or heavy cream can also tend to separate as they stand.
