Hi there, Nigella mentions rose jam in some recipes and as I can't find it in my local store, would you have a recipe for it as I would love to make it. I guess I could make regular raspberry jam and put some rose water in it?

Rose petal jam, or rose petal jelly, can be bought from some on-line retailers or you may find it in Middle Eastern supermarkets. If you can't find it then raspberry jam (preferably seedless) is good alternative. You could add a little rose water to a store-bought jar of raspberry jam to perfume it, but add the rose water carefully, a few drops at a time.
Unfortunately we don't have a recipe for rose petal jam as we have only ever used store-bought versions. If you are making your own raspberry jam then we would suggest adding some dried rose petals to the fruit before you boil the jam, as this will give it a subtle rose flavour. We would suggest about 1 tablespoon of dried rose petals (remove any dried leaves first) for 500g fruit. Dried rose petals can be bought in some UK supermarkets or on line, but make sure that they are food grade as some of the dried rose petals sold are for decorative purposes only and not edible. If you want to add rose water then we suggest adding it to the jam just before you use the jam, as rose water tends to evaporate very quickly if you add it to very hot jam. Again, add it just a drop or so at a time so that it is not overpowering.
