Nigella's Raw Beetroot, Dill And Mustard Seed Salad (from NIGELLA SUMMER) has a Scandinavian influence with the combination of mustard and dill. There are 3 types of mustard seeds and they all come from slightly different plants. Yellow mustard seeds are also called white mustard seeds and the vibrant yellow colour of mustard powder and ready-made English mustard actually comes from the addition of ground turmeric.
Brown mustard seeds have a medium heat and are usually used in Dijon mustard. Black mustard seeds are used most frequently in Indian cooking and are the hottest of the three. The three types of mustard seed are interchangeable in this recipe and, as the recipe does not specify, you can use whichever mustard seed fits your taste and you can buy easily. If you want pungency without too much heat then use white/yellow mustard seeds. For a spicier dish use brown mustard seeds and it you want a hot kick then use black mustard seeds.
