What Cup Measurements Are Used On Nigella's Website?

Full question

Are cup measurements in the recipes on Nigella.com British (metric) cups or US cups? I know they are different sizes and could change the results of the recipe.

Our answer

On Nigella.com there are two options for measurments in the ingredients list. The default is metric weights. However, if you use the sliding toggle on the top right hand side of the ingredients list you can get cup measures for the ingredients and imperial weights, where appropriate.

These measures are for US cups, where a standard cup is 240 mls, a half cup is 125 mls, one-third cup is 79mls and a quarter cup is 60 mls. For dry ingredients, such as flour, the ingredients should be spooned into the cup until slightly heaping, then use a flat blade, such as the back of a table knife, to level the cup. For light and dark brown sugar the cup measures are firmly packed and for produce (such as herbs) the cup measure is loosely packed. And if possible, it is better to measure liquids in a measuring jug, as this gives a slightly more accurate metric to cup conversion.
