Nigella uses steak sauce in the Mini Meatloaves recipe (from Nigella Express and on the Nigella website) to add flavour and moisture to the meat mixture. Steak sauce is a brown sauce that is popular in the US. It was originally made for King George IV and is based on malt vinegar, raisins and spices and over time other ingredients have been added. The recipe was taken over to the US at the end of the 19th century and has remained popular ever since. Although it is usually served with steak or red meat, it can also be served with cheese, bacon and other meats.

A1 is the most well-known brand and is easily available in the US. In the UK you may find it now in some larger supermarkets or you can use HP sauce as an alternative. In other countries you may be able to find either A1 sauce or HP sauce on-line. You can also serve some of the sauce with the meatloaves.
