What Is The Total Amount Of Ginger Cake For Gingerbread Stuffing?

Asked by Rejusu. Answered on 17th December 2021

Full question

How much gingerbread is needed for the gingerbread stuffing? Is it two loaves that total 400g? Or two 400g loaves? McVities Jamaica comes in roughly 200g loaves so the quantity is a little confusing.

Our answer

Nigella's Gingerbread Stuffing (from [NIGELLA CHRISTMAS/books/nigella-christmas)) is a warmly spiced stuffing (or dressing, as it is baked in a separate pan) made with bacon and sticky ginger cake. For ease, Nigella suggests using store-bought loaf ginger cake, such as McVitie's Jamacian Ginger Cake.

When the book was originally published, one package of the cake was 400g, but it has since suffered from "shrinkflation" and the size of the package has been reduced. But for clarity, the total weight of cake needed for the recipe is 800g. If you can't find the store-bought cake then Nigella's Cider And 5-Spice Bundt Cake (you can bake it in a 20cm/8-inch square pan) or Luscious Vegan Gingerbread would be good recipes to use to make the cake instead.

  • A delicious spiced stuffing that's ideal to serve as an alternative stuffing with turkey at Christmas time, it's ideal for any cold leftover meats, sausage rolls, pork pies, quiche in sandwiches for Boxing Day tea or with a cheeseboard with pickles, relishes, I like it with the addition of cooked cranberries, chopped up pecans or walnuts try something different to add to your festive menu I'm certain that your family will enjoy it immensely as much as I do. Many thanks Nigella on another fantastic dish! Enjoy xxx
