Hello, goddess lady and team! In the New Orleans coleslaw recipe, by "white cabbage", do you mean Napa cabbage, the kind-of-ruffly kind? Thanks for all you do, Kevin.

Our answer

Nigella's New Orleans Coleslaw (from Nigella Express and on the Nigella website) is a classic cabbage and carrot mixture that is enhanced with the addition of celery, spring onions (scallions) and pecan nuts. The white cabbage mentioned in the ingredients is the tight-headed crunchy type of cabbage that is known as green cabbage in the US.

Napa cabbage is slightly different and in the UK this is known as Chinese cabbage. Unfortunately the more delicate part of its leaves will tend to soften too quickly in the dressing so we would prefer to use the white/green cabbage.
