Nigella's Cocktail Sausages (from NIGELLA EXPRESS) are small sausages cooked in a sweet and sticky combination of sesame oil, honey and soy sauce. The sausages are usually extremely popular as a party snack or hot canape.

In the UK cocktail-sized sausages are small sausages, about the size of an adult's thumb. They are made with regualr sausage meat and are meatier and with a slightly coarser texture than frankfurter sausages. If you can't find this specific size of sausage then it is possible to make them from thin sausages, which in the UK are known as chipolata sausages. In the US breakfast sausage links would be the closest equivalent. Carefully twist each sausage in the centre several times and then cut at the twist to make two smaller sausages. Usually the chipolata and cocktail sausages would be made weith pork, though we suspect that beef and chicken sausages may work in this recipe as well. However, as we have not tested the recipe with alternatives, we are unable to guarantee the results.
