Full question
How do I know when the Chocolate Guinness Cake is done? I have made it before and because it is so moist I had a hard time telling when it was cooked enough. Is it normal to have a toothpick come out with a few crumbs?
Our answer
Nigella's Chocolate Guinness Cake (from FEAST) is a very moist cake that is similar in texture to a damp gingerbread cake. As it is a large cake the baking time can vary, but is usually between 45 minutes and one hour. It is a good idea to check the cake carefully after the shortest baking time, and if it is not done then bake for a further 5 minutes and check again.
When the cake is properly baked it should look shiny and set on the surface and the top should feel firm and slightly springy. The top edges of the cake may also be shrinking away slightly from the edges of the tin. A cake tester (or toothpick) inserted into the centre should come out clean or with or with a few damp crumbs clinging to it. However if there are any traces of uncooked cake batter on the tester then the cake should be baked for 5 minutes longer and tested again.
