In the Spinach, Pine Nuts and Sultanas - is the wine added over the water or the water is removed and then the wine is added? Thank you.

Nigella's recipe for Spinach With Pine Nuts And Sultanas (from FEAST is a sumptuous side dish that pairs well with roasted or grilled fish or meats, but would also be a good dish to serve at a vegetarian feast. The sultanas are soaked in hot water before using, so that they can plump up and become juicy and sweet.
Once the raisins have soaked in the water they are drained before they are added to the pan of spinach. You do not need the soaking liquid so it can be discarded. The white wine is added to the large pan with the softened onions, before the rinsed and drained spinach is added and cooked (step 2). The drained raisins are added at the end, along with the toasted pine nuts.
