Full question
Hi, I want to make the coconut macaroons but I just cannot find the shredded coconut you advise is a ‘must’ for this recipe… I can only find desiccated. I’m in the U.K. Thank you!
Our answer
Nigella's Coconut Macaroons (from HOW TO BE A DOMESTIC GODDESS) are soft, slightly chewy cookies that are a combination of whisked egg whites, sugar, ground almonds and coconut.
Nigella mentions that the coconut needs to be sweetened, shredded coconut rather than desiccated. This is important as sweetened, shredded coconut is much moister and has larger shreds than dry, powdery desiccated coconut and makes the macaroons moist and chewy. This type of coconut is easier to find in the US than in the UK, but in the UK it is available from many on-line retailers. The best-known brand is Baker's Angel Flake sweetened, shredded coconut, so if you type this into your internet search engine than it should bring up several options for mail order.
