Whipped Cream For Chocolate Cloud Cake

Full question

What is the difference between the Chocolate Cloud Cake and the Flourless Chocolate Lime Cake (With Margarita Cream)? Also why doesn't the cream for the Chocolate Cloud Cake have sugar in it? Many thanks!

Our answer

Both the Chocolate Cloud Cake (from NIGELLA BITES) and Flourless Chocolate Cake with Margarita Cream (from KITCHEN) are flourless sunken chocolate cakes. The main difference is that the Flourless Chocolate Cake contains ground almonds (almond meal) and so has a slightly crumbly texture whereas the Chocolate Cloud Cake does not contain any ground nuts or flour and has a slighty firmer texture when is has baked and cooled. The Cloud Cake also has a higher proportion of chocolate, giving a richer flavour.

The Cloud Cake is accompanied by a whipped cream flavoured with vanilla and some optional orange liqueur. If you are using Cointreau then this will add a little sweetness. If you wanted to make a crème chantilly then you could use a tablespoonful of icing (confectioners') sugar instead of the liqueur, or plain whipped cream would also be a good alternative. The Margarita Cream contains lime juice, so needs the addition of sugar to balance the sharp acidity of the lime.
