Nigella's Slow Roasted Garlic And Lemon Chicken (from NIGELLA SUMMER) cooks a large chicken that has been cut into pieces at a lower temperature than you would normally roast a chicken. As the chicken is initially covered it braises in the white wine, oil and lemon juice so that it is flavourful, tender and moist, then the chicken is uncovered and cooked at a higher temperature to crisp the skin and intensify the juices.

It is better to cut up the chicken (or use chicken thighs on the bone and with the skin on) as it ensures even cooking. If you roasted a whole chicken then it would take longer than the 2 hours in the recipe and there is a risk that the breast will start to dry out slightly. Instead, if you would prefer to cook a whole chicken, we would suggest trying the Italian Roast Chicken With Peppers And Olives or, for roast chicken at a slightly lower temperature, try the roast chicken from Tagliatelle With Chicken From The Venetian Ghetto.
