I have tried the Bar Nuts recipe a few times - and it seems the butter, brown sugar, salt, cayenne pepper mix seems to clump together when mixed with the nuts. You get nice little sweet and savory morsels - but I would rather have the seasoning mixture well dispersed throughout the nuts. What am i doing wrong?

Nigella's Bar Nuts (from NIGELLA BITES) are spicy, salty and sweet toasted nuts that are perfect to serve with cocktails or pre-dinner drinks. The nuts are toasted and then tossed in the spiced butter.
It is slightly unusual for the mixture to clump as the warm nuts should help to keep the melted butter liquid and melt the sugar a little. If the nuts are cold then the mixture would be more likely to clump as the butter would start to solidify, so make sure that you add the nuts directly after toasting them. Otherwise, you could melt the butter, sugar, salt and cayenne together until the sugar has melted, then use this mixture to coat the nuts and sprinkle over the chopped rosemary as you toss the nuts.
