Our answer

Nigella's Gluten-Free Banana Bread from COOK, EAT, REPEAT) uses a combination of rice flour and ground almonds (almond meal). The addition of Greek yogurt helps to give the banana bread a light and tender crumb.

For a non-cow's milk yogurt we would probably use a regular soy or soy-almond yogurt as Nigella has used this yogurt in other cakes. Some of the other plant-based yogurts can have higher fat contents, which can make the cake feel slightly heavier in texture. However, we would mention that as we have not tried the banana bread with these alternatives, we are unable to guarantee the results.
