Yogurt For Peanut Butter Hummus

Asked by Hewey. Answered on 26th July 2020

Full question

I’m dairy free, what could the Greek yogurt be substituted for in the Peanut Butter Hummus? I do not like the taste of soy or coconut milk yogurt. Would water be ok if the aim is to loosen mixture? Any other suggestions? Thanks.

Our answer

Nigella's Peanut Butter Hummus (from KITCHEN) is made with smooth peanut butter instead of tahini (sesame seed paste). Some Greeek yogurt is added to loosen the hummmus and also to lighten the hummus slighly and not make it too cloying. You could use a plant-based yogurt that you do like as an alternative (such as cashew milk yogurt).

If none of these are available then you could add water but we would suggest adding maybe a tablespoon of extra olive oil and 3-4 tablespoons of cold water so that the hummus doesn't taste too "thin". You may also find that you need an extra squeeze of lemon juice as well, just to balance out the overall flavour. The balance of salt, fat and acid is always slightly personal, so taste and adjust according to your own palate.
