My trifle dish wasn't quite big enough, so I ended up making 4 individual trifles in wine glasses as well. In fact I think I'd just make individual trifles in wine glasses next time, rather than one big trifle. And there will be a next time, as this was so, so good. I used Austrian Himbeer (raspberry) Schnaps rather than vodka to pour over the raspberry sponge layer. This gave a lovely extra raspberry ''kick'' to the bottom layer. My attempt at making the caramel to decorate the cream layer failed miserably, so I just sprinkled some dark chocolate shavings over the tops of the trifles instead!
