Ricotta hotcakes made to the recipe except with white spelt flour substituted for plain flour and a splash of vanilla extract added. I've served them with blush pears, mint, goats yoghurt and a drizzle of honey. I'm a huge Nigella fan - her cookbooks are the first cookbooks I was exposed to as my mum had them all. I am now pursuing a career in food, so I like to think Nigella played a part in that. I am very excited about the release of Simply Nigella, the shots from Instagram look great!
