We considered icing the entire cake with a cream cheese icing with a little orange rind mixed in, but we thought this would make the cake too rich, and would be popular with the more health conscious members of the family. Instead we decided to serve it as an optional side. We are pleased with how the cake turned out and are pleased with the result.
